Savour Smashed Avo Omelette
- 2 eggs
- 1 additional egg white
- Handful baby spinach
- 4 chopped mushrooms
- Handful halved baby tomatoes
- ½ avo
- Lemon juice
- Whisk eggs together – season with salt, pepper and dried herbs.
- Dry fry mushrooms, tomatoes and spinach and season.
- Once cooked put aside.
- Use same pant to cook egg mix
- When cooked with veggies and fold over
- Top your omelette with smashed ½ avo, season with salt and lemon juice
